Vincent says: This is a sort of Mexican pizza which is named for the last of the Aztec emperors.  When Cortez and the Spaniards conquered Mexico, they took over many of the strange new foods as well as a wealth of gold and silver.  Peppers, corn, chocolate and sweet potatoes were introduced to Europe as a result of the Mexican conquest.  Probably even in Montezuma’s time the Aztec women made the flat corn cakes called tortillas.  They are still a staple of Mexican cookery, a sort of instant bread that the people fold around cooked beans or chili and eat like sandwiches.  In this recipe the tortillas are used in place of a pie crust for the tomatoes, pepper, meat and cheese pie.  We like to serve this with a tossed salad and a glass of cold beer.
