Vincent says: Creamed corn is usually a rather pallid dish, but we found that the Mexican version was flavourful and interesting.  When we had it there, it was made with a semisoft sheep cheese that came from the district of Chihuauhua, unavailable in this country.  Swiss or Muenster cheese are good substitutes.
