Vincent says: This wonderful apple tart was the finale to a sumptuous lunch we had one afternoon.  No one wanted dessert, but then the waiter whisked a beautifully sugared apple tart under our noses.  It was still warm and fragrant, and all of us, like hypnotized zombies, followed it with our eyes, watched the waiter cut it, let him place slices in front of us, and ate it with complete satisfaction.  The recipe is notable in our collection for what is perhaps the most perfect pastry crust we know.
