Vincent says: Fish and cucumbers, two of the most omnipresent foods in Scandinavia, here show their affinity for each other.  La Belle Sole, one of the finest restaurants in Oslo, serves trout boiled to perfection with mustard and a savory butter, and to complement the piping hot dish, a cool, crisp cucumber salad.  The cucumber salad, called pressgurka, crops up all over Scandinavia, and we have learned to love it.  Mary bought one of those boards with an adjustable blade called a mandoline just so she could shave the cucumbers sufficiently thin to make pressurga the true Scandinavian way.
